Sending price alerts needs a server that watches prices and a way to reach your phone. That means a small amount of data, and the question is how small.
Your phone's notification token, the coins you watch, your alert rules, your language and your time zone. Together, that is very little. That is enough to send the right alert at the right time.
Wallet addresses and balances. The server does not know what you hold, so it cannot know about your stakes either.
When you switch alerts off, the data is deleted. You can switch alerts off at any time. It is also deleted after 60 days without the app being opened.
Anything the server does not need, it does not collect. That keeps the data small and the consequences of a problem smaller. It also stays clear what each item is for.
