A reminder about a stake needs to know the stake's end date. That does not mean a server has to know your wallet.
Your phone reads your wallets from their public addresses and finds the stakes and their end dates. That information is already on the phone. The server sees none of it.
The phone itself can schedule a notification for a date. It needs no server for that, so the reminder works with data that stays on the phone. It also needs no internet connection at that moment.
A server is only needed for price alerts, because someone has to watch prices when the app is closed. It handles coins and alert rules, not wallets.
Because the server never receives wallet addresses, it cannot know about your stakes. Stake reminders and price alerts are separate in this respect.
Pulse Radar sets stake reminders on your iPhone and keeps wallet addresses off its server. Open Pulse Radar
